2 medium heads of romaine lettuce, cut lengthwise into wedges
Olive oil for brushing
½ cup of shredded parmesan cheese
Lemon wedsges for garnish
2 cloves garlic; minced
3 tablespoons olive oil
Zest of 1 fresh lemon
2 tablespoons fresh lemon juice
1 tablespoon balsamic vinegar
½ teaspoon Dijon mustard
1 teaspoon soy sauce
1 teaspoon brown suger
½ teaspoon paprika
½ teaspoon kosher salt
Black pepper to taste
- Combine the dressing ingredients in a bowl and whisk the ingredients. Set aside.
- Turn the grill on to 350ºF. Be sure that the grill grates are clean.
- Lightly coat the romain lettuce with oil, and grill the lettuce until they’re cooked and slightly charred.
- Allow the lettuce to cool completely. Drizzle the dressing on top and sprinkle with cheese. Serve with lemon wedges and enjoy.
